  The McKean cooking process involves the simmering of the haggis in large open-top vats containing the stock, rich in flavour and absorbed by the natural casing of the Haggis, all elements which,  when coupled with the carefully guarded blended recipe of Herbs and Spices,  lift the McKean Haggis to a higher plain than  it's younger pretenders. It can also be stored in your fridge for up to eight weeks !
