Ingredients For McKeans Haggis Stuffed Chicken

4 Skinless chicken breasts
200g McKeans haggis
150 mls single cream
1 small shallot
Black peppercorns
A little oil

How To Make Haggis Stuffed Chicken

Make a slice lengthwise into each chicken breast, being careful not to go right through, to form a cavity for stuffing.

Stuff the space in the chicken breasts with 50g of haggis for each chicken breast.

To prevent the chicken splitting during cooking this stuffed chicken recipes we advise securing each chicken breast with a couple of cocktail sticks.

Seal the chicken on all sides in a frying pan with a little oil.

Place onto a baking tray and cook for 30 to 35 minutes until cooked through and juices run clear.

Meanwhile add the finely chopped shallot to the pan in which you sealed the chicken breasts and soften without colouring.

Add the cream and a good spoonful of whole peppercorns and cook for 3 to 5 minutes. A few mls of whisky could be added at this stage to enhance the flavour.

Serve the chicken breasts with the peppercorn sauce poured over and some seasonal vegetables.
